Because the Great Egret is always such a stark white it’s one of the few animals that work well with subdued, or no color.
Wildlife in monochrome can easily get lost in the textures and shades of the surrounding area. Everything is just too busy.

Technically this is a color image. All the saturation and luminance is very soft.
This works because of the far background and bokeh.
